I would say, Game knife, A knife for cleaning and dressing an animal. More specifically, the knife comprises a blade having a perimeter defined by a parabolic cutting section, a straight cutting edge, a blunt top edge, blade sleeves.

Kershaw Blackhorse 2. You can take the grip off of it with the screws that hold it on. This is an advantage when it is covered in blood and you want to get it super clean after the hunt and skinning chores.

I think Kershaw knifes are better. You can take the grip off of it with the screws that hold it on. This is an advantage when it is covered in blood and you want to get it super clean after the hunt and skinning chores.
These are made in Japan in the area where Samurai swords have be crafted by artisans for years.

A good traditional fixed-blade hunting knife, for example, is adequate for field-dressing and skinning game and other jobs such as cutting rope or twine, whittling tinder for fire-building and cutting up food

My uncle is a full time hunter and he has a special knife for this. The blade is narrow and very flexible. I will ask him about the proper name.

Fixed blades that are sharp usually do the trick, don't use a retractable or hinge blade.

I just use a fixed blade knife that is about 6 inches long, that has a saw blade on the blunt side of the knife. Works well for sawing through bone (although a bone saw works best here), and sinew.
