While I have never used them as pillows, I do keep a ziplock bags of different sizes in my BOB. I use them for when I find edibles in the wild, such as wild strawberries. They also work for storing leftover foods in and the larger ones can be used to haul any meat you would get from killing wild game.
I also use them for keeping clothes clean and dry. This also allows you to have them without any extra space being taken up. If you then need them for another use, you can always remove the clothing and use the bag for other purposes.
Another use they could have is for carrying extra water if you end up having to enter an area where water is very scarce. I haven't actually tried this out in the woods, but the better ones are water tight, so I don't see any issues with this.
