 Post subject: Drying meats and/or making Biltong

I want to try making South African Biltong. From everything I've read and watched, it seems easy to make. However, I'm worried about flies during the curing/drying process, if I don't build a screened rack or buy a biltong box. Anyone have any experience drying meats or making biltong? I want to do it the natural way, rather than using a dehydrator or oven.
